A lot of old tweaks and stuff won't be updated because of APIs being changed or dropped or just not worth it because of it all now being integrated into the OS.
For the new firmwares (4.0 and higher) the absolute essentials for me would be:
OpenSSH - transfer files from iPod via WiFi and setup iPod as server.
OpenSSL - secure file transfers, installs along with OpenSSH
DirectControl - show multitasking controls instead of open apps at bottom of screen
FreeSync - change sync screen to an alert on home screen.
NoBookmarks - stops bookmarks page from showing first when you start Safari
NoRotationStatus - hides the rotation icon in the status bar to look cleaner
NoSpot - hides Spotlight on home screen but not disable search in iPod
SafariTweak - scroll up in Safari to refresh pages
MailTweak - same as SafariTweak except for the mail app
Winterboard - themes, custom lockscreens etc
Activator - custom swipe actions such as swipe status bar to change track etc
TVTube - goes into sleep mode in the old TV-tube style
YourTube - download YouTube videos to watch offline in both low and high-res
PopupBlocker - block certain popups such as low battery etc
