I have iTunes now and when I connect my iPod to the computer iTunes starts to synchronize

You must do that with iTunes:
To delete: you simplay right-click on the song you want to delete and then you choose 'delete', if you synchronize later on those songs won't be on it anymore...
To add: You pick a song (outside of iTunes), right-click, and then you click 'open with iTunes', if you synchronize latern it will be on it....
