POP Muzik wasn't ever actually performed by the band. Only played over the PA's while the band walked to the stage during the POPMart tour (this you probably knew). However, the studio version ["POP Muzik (POPMart Mix)"] does have vocals from Bono. The people in charge of audio for the documentary probably just mixed that file in with crowd noise.
