Not sure why they aren't doing it like that now. I've never really understood the whole "Adam and Larry leave and Bono and Edge play by themselves" thing. I think it worked OK on ZooTV when they'd do an acoustic set and then Edge and Bono did Satellite of Love while Larry and Adam got ready for whatever the next song was (I guess that's similar to what they do now..), but now it's sort of awkward. I can't really explain why, but to me it's just odd. It separates the band for me and U2 has always been those four guys and not about pushing the fact that most people only know Edge and Bono.
I've never liked a "Bono and Edge only" version of a song better than any version they've done with all four of them.
