Don't forget the tour that they're on. Why would they suddenly start busting out Pop songs? Sure you can go on and HOPE they do it, but don't be upset when they don't. The entire tour up to this point has been the same format, there's no reason to expect them to change it up drastically. They want to continue to play the show they feel they've perfected. Early songs, JT, later hits + a new song to begin promoting their new album.
Best Thing acoustic vs "Single" version is a different conversation - they're playing the song and that's part of the setlist.
Maybe it's just me (doubtful) but I think adding Sweetest Thing is a great way to both answer the b-side question and still keep the majority of their audience focused on the show. You guys might want to hear Walk to the Water, but I can tell you how that would go down at a stadium show.
"Beer time!"
Sweetest Thing is recognizable, it IS a good song (despite whether you think it's the lamest choice of a b-side song to play), and it's cool that they're even adding that at this point IMO. It would be cool if they busted out something like Silver and Gold (IMO the only other b-side they might play in 2017), but I'm not pissed off that they aren't.
Lighten up.

"Change the set!"
"Keep it the same!"
I'm not sure they needed to change the set either, but maybe they feel pressured to, or they just want to, who knows. Picky picky.

I was never too critical this tour about Setlist variation. Usually i like some but they did as advertised played JT in full every night. I just think myself and others get fed up when finally we do get a Setlist change and it’s underwhelming. It’s crazy out of all the songs they have how they manage to pick out one that nobody particularly wants. Ask 100 u2 fans for a song tonight to make a tour debut and how many would pick the sweetest thing? I’m talking a mixture here between die hard’s and casuals, probably nobody would have picked it. It’s not make or break, a good performance of TJT section is more than enough for me but if we had to be really honest about it the sweetest thing is a poor choice.

Better than an acoustic version of The Best Thing.
