Encryption is easy though, have a look at TrueCrypt, PGP, etc. For internet Tor is a anonymous network. Although i have never used them i might in the future.
All modern encryption is based on pure math. It is always possible to hack, but there are so many variables it will take xxxx years on the fastest pc's available now.
Even Skype calls are heavily encrypted, although they must comply to tap request from your government. But foreign cops are cursing everytime they find out a criminal uses modern technology. There is just nothing they can do.
No need to worry about u2start though
